I haven’t tried it with music so I’m not 100% sure, but I assume if you have music files visible in Plex, then you should be able to. The next step is to find out what your Plex devices are called so you can quickly and easily cast to them from Google Assistant. I think it may also depend on the level of complexity and specificity of the commands. I will gladly participate in an Alpha/Beta test. It should work with any app that supports cast or is a branded "Plex app". On some systems, the Plex app needs to be running in order to be controlled.
I’ve contacted Google today and they didn’t add Plex to Google Home because they didn’t have enought requests about it. Is the Chromecast with Google TV the best Plex client? Overall, I’m pretty happy with the menu navigation and performance. That said…the Chromecast with Google TV wasn’t that much slower. Even on my NVIDIA Shield, it takes a few seconds to load all of the media assets and get to the bottom of the screen.

Although Netflix has support now, it does not play specific episodes which is a fail. I can pause Plex on chromecast ultra out of the box. Plex Assistant is probably your best bet, but it requires Home Assistant as well. The setup is pretty long and complicated, but it does work pretty well. I don’t think this requires a Plex Pass, although I have a lifetime pass and don’t have a way to confirm that. Or, if you set it up with IFTTT, you could make the invocation whatever you want. I think there's a known issue with Chromecasts at the moment, but if I were you I'd try installing it and see if it works with your Roku. I'll have to look at getting this installed to test it out. I have Home Assistant w/ Supervisor installed on a VMWare Workstation VM on my Windows 10 PC. After giving IFTTT permission to your Google Home, you can choose up to 3 trigger phrases to invoke the Plex Assistant requests. Click Add next to the black “If This” button and select Google Assistant.
